Cooking Through "The Baker's Man": Peanut Butter Truffles

Peanut Butter Truffles
Serves: 36 ping pong ball-size truffles
Difficulty Level: Super duper easy

Ingredients
16 oz Nutter Butter cookies
8 oz cream cheese, room temperature
melting chocolate

How to Make
  1. Add cookies to a food processor and pulse until finely ground.
  2. Add cream cheese to food processor and pulse until combined.
  3. Dump truffle mixture into a bowl so as not to have to work around the blade in the food processor. It's sharp!
  4. Roll truffle mixture into balls and line on a baking sheet covered in wax paper or parchment paper. Put truffles into the freezer for at least 30 minutes.
  5. Melt chocolate in a microwave-safe bowl in 30-second increments until chocolate is completely melted. Using a fork, dip truffles into chocolate, cover completely, tap off excess, and return to the baking sheet.
  6. Once all truffles are coated, place them into the refrigerator for at least 15 minutes or until chocolate is set.
